- BASIC UNCOOKED BUTTERCREME FROSTING

- 3 egg yolks
- 1/4 cup powdered sugar
- 1 teaspoon vanilla
- 1 stick butter softened
- 1 stick butter chilled

- Put first 3 ingredients in electric blender and blend until well mixed.
- Add softened butter a little at a time to blend. Then blend in the firm
- butter a little at a time until creamy and thick.

- Variations:
- BEFORE ADDING BUTTER add 1 square melted and cooled unsweetened chocolate
- or 1 teaspoon instant coffee. or both.
